You can show how much oxygen is in the air by putting a candle in a saucer of water, and then putting a glass jar over it. The candle will burn most of the oxygen, and water enters the jar to replace the oxygen, and you can measure how much the water level goes up in the jar. It’s not exact (it’s good to try to think of reasons why this is), but it’ll be close to 20%
You’re right, we breathe in all the gases in the air, but only oxygen is taken up in the lungs by the body. In the lungs, oxygen is taken up into the blood and carbon dioxide (CO2) is released. The other gases go in and come straight back out. So we take in 78% nitrogen and breathe out about 78% nitrogen. In the air we breathe out there is less oxygen and more CO2.

then why do people say that we ONLY breathe oxygen when we breathe other sorts of gases apart from oxygen?
